General description hitin, a linear amino polysaccharide composed of β1,4-linked N-acetyl-D-glucosamine (GlcNAc), is the second most abundant natural biopolymer. It forms the carbohydrate backbone of the exockeletons of crustacians and insects and is also found in the cell wall of yeast and fungi.
